One of the great things about being a vegetarian is to serve meals that are a smorgasborg of interesting side dishes; no longer are we stuck with the old way of having a protein, starch and bland veggie plate arrangement. Give this one a try. Herbed Potatoes 'n' Peas 1 pound small red potatoes 2 bay leaves 1/4 cup vegan margarine 3/4 tsp. salt 1/4 tsp. dried marjoram 1/4 tsp. dried thyme 1/2 tsp. garlic powder Dash of ground pepper 1 package [10 oz.] frozen peas, thawed Place potatoes and bay leaves in a saucepan; cover with water. Bring to a boil. Cover and cook for 8 to 10 minutes or just until tender; drain. Cut the potatoes into quarters; return to pan. Add butter and seasonings. Cover and cook for 5 minutes, stirring occasionally. Stir in peas; heat through. Discard bay leaves.
