Thanks pt! Today's first day was cool,if a little overwhelming. It's a family-owned bakery/restaurant cafe. The kitchen is small (only a little bigger than a home kitchen), but boy is it busy! (At least he does have pro double ovens- at Thanksgiving they do 600 pies.) The owner knows all the recipes by heart of course, and when to time things in terms of oven availability (very tight scheduling), and that's stuff I'll need to learn. The other thing was that he uses containers over - and none of them are marked, you just have to know what's in it. *lol* But I think it's going to be a lot of fun, and all the folks seem really great to work with.
