Guest guest
Here is my version of the recipe i was inspired by in the Simply Heavenly cookbook. Mine is more spicy and has no sweetness from the ketchup in the original recipe; i didn't like ketchup idea. However, if you are the sort that enjoys adding a sweetness to your slaw dressing, just add some sugar or sucanat to taste. If you like spicy salads, you will love this one. Cajun Cole Slaw 1/2 cup Veganaise 2 Tbs. Dijon mustard 1 Tbs. olive oil 1 Tbs. Sriracha chili sauce 1 tsp. Cajun seasoning 1 tsp. garlic salt 1 Tbs. red wine vinegar 2 Tbs. lemon juice 1 bag cole slaw shredded cabbage mix 1 jalapeno pepper, seeded and minced Put the mayonnaise and Dijon in a bowl. Beat together until combined. Slowly add the olive oil, whisking all the time, until the mixture is smooth and thick like the mayonnaise was. Add the chili sauce, Cajun seasoning, garlic salt, vinegar, and lemon juice. Place the cabbage mix and the jalapeno pepper in a large bowl and pour the dressing over all; toss well. This should sit at least an hour before serving; tastes even better the next day. ~ pt ~ Do not fall on a bed of sloth, Let not your intoxication overcome you, Begin a voyage across the clear sea, If you would reach the Land of Women. ~ 'Voyage of Bran mac Febal', early Irish text
