I am developing Susie's recipe and I imagine that it will be wonderful. The change to vegetarian dishes takes a while. I have looked at quorn (made with eggs...yuk) and can't find tofu anywhere, (who needs substitutes anyway?). However I have seen recipes with a mixture of beans as an alternative. It is a trial for my sons (not only for me!) I have looked again at my Jambalaya recipe but you know that vegetarian alternatives are not the same as meat recipes because the crystal structure (of veg) takes on board less spice and therefore they are not quite the same. I have two more trials but I think with a change of spices we can achieve a lovely mix. The joy of the meal is as much in the herbs as the spices!
