Guest guest Posted September 23, 2005 Report Share Posted September 23, 2005 Hi I really like to make a full Jambalaya for myself and sons and it looks so enticing with the trinity of vegetables so bright and complementing the sausage in the first stages. However, I then added chicken chunks and a few prawns (shrimp) and I wish to make a full vegetarian dish now. Does anyone have a full vegetarian option to substitute please. I tried aubergine (eggplant) but it is a little rubbery if not pre- cooked and then it goes mushy. I know there is tofu which can be cubed but I haven't tried it.
