Zappy Cider

Interesting info about the e-coli scare and

pasteurized cider.

Now when you mention " zappy " , do you mean

when the cider sits and starts to go hard, fermenting

a bit? We used to love drinking the last few gallons of

the hard stuff. :)

yes, that's it. I like it best before it's fully hard, when there is

still a lively tingle of living activity and enzymes in it, before

the alcohol has killed it. there's still enough alcohol to alter

perception, so it's best in the evening when all settled in and no

need to drive anywhere. and count on a night of deep sleep....
