Guest guest Posted September 13, 2005 Report Share Posted September 13, 2005 Here's the recipe for carrot-pineapple-raisin bread...we call it cpr bread at my house...it is from my favorite quick bread & muffin book by dimetra markis 1 1/2 cups unbleached flour, sifted 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 tsp cinnamon 2 eggs 1/2 cup firmly packed light brown sugar 1/2 cup veggie oil 1 tsp vanilla 3/4 cup chopped fresh or canned pineapple, well drained 1 cup peeled and grated carrots 1/2 cup raisins Preheat oven to 325 & grease and flour a 9x5x3 loaf pan. Sift together the flour, baking powder, baking soda, salt, cinnamon and set aside. In a large bowl beat the eggs. Add the sugar, oil & vanilla and mix well. Stir in the pineapple, carrots and raisins. Add the dry ingredients to the liquid & stir till well moistened. Spoon batter into loaf pan and bake for 50 - 60 minutes or until a pick inserted in center comes out clean. Cool on rack 10 minutes, remove from pan & cool completely.
