Guest guest
I often cut it in bite-sizelengths, spray it with oil and sprinkle with salt & lemonpepper, then roast it at 400* or so... then put it on a salad of romaine with chopped avocado, chopped mango and a chili-citrus vinaigrette. The recipe is in Fields of Greens by Annie Somerville, but I don't have it here yet so I can't give you the specifics at the moment. But try it if feel like experimenting! It's yummy!
