Guest guest
This salad is so good and if you love asparagus season, you will surely want to give it a try. Now, i have used sesame oil instead of peanut. And, if you have rice vinegar, you can use that and you won't need to add any sugar to the dish. Oriental Asparagus Salad 1 pound asparagus, cut into 2 inch pieces 2 Tbs. soy sauce 1 Tbs. vegetable oil [i use peanut oil] 1 Tbs. vinegar 1 tsp. sugar 1 tsp. sesame seeds, toasted 1/2 tsp. ground ginger [i used fresh] 1/4 tsp. ground cumin In a saucepan, cook asparagus in a small amount of water until crisp-tender, about 3 to 4 minutes. Drain well and place in a large bowl. Combine the soy sauce, oil, vinegar, sugar, sesame seeds, ginger, and cumin; pour over asparagus and toss to coat. Cover and chill 1 hour. Drain before serving.
