Guest guest Posted September 11, 2005 Report Share Posted September 11, 2005 My kitchen smells marvelous from cider boiling...mmm! Here's the recipe, it is from the Moosewood Cookbook. Cheese Beans 6 cups pinto beans (or kidney - I just use 3 cans and it is fine - I like pinto cuz the kids fuss about the tough skins on kidney beans) 2 cups chopped onion 2 large cooking apples, in chunks 2 cups grated mild, white cheese (jack or muenster) 4 medium size chopped tomates 6 Tbs dry white wine 2tsp chili powder 1 tsp dry mustard salt and pepper to taste Saute onion in butter till soft and clear. Add chili powder and mustard. Combine beans (make sure they are well cooked), sauted onion & everything else. Pour into large buttered casserole, cover and bake at 350 for 35 minutes or so.
