[recipe] Corn Pudding ~ and vegan question

This dish is so rich and delicious. Definately a treat

when served with mashed potatoes and lentil loaf.

i was wondering though if anyone here had a vegan

version of corn pudding that they enjoy?

 

Corn Pudding

 

3 eggs

1 cup whipping cream

3 cups frozen corn, thawed

1/2 cup butter, melted

2 Tbs. sugar

4 1/2 tsp. all-purpose flour

1/2 tsp. salt

1/4 tsp. pepper

 

In a large bowl, beat eggs and cream.

Add the corn and melted butter.

Combine the remaining ingredients;

stir into corn mixture.

Pour into a greased 1 1/2 quart baking dish.

Bake, uncovered, at 350û for 45 to 55 minutes

or until set and golden brown.

Yield: 4 to 6 servings
