The niri is the long thin grass type blades that are a cross between a green onion and garlic flavor. I chopped them finely and added to potato salad on Monday and they really added a wonderful taste. I found more at the Asian market this morning for 50 cents a bunch. Don't pass then up if you see them. The lotus root is very delicious. I peel it and cut in slices. Boil for about 12 mins or you can peel and boil whole root until tender but slightly firm. When done take the round slices and saute in a little sesame oil, add soy and teriyaki sauce and cook on low until the sauce thickens. This is a delightful appetizer and gorgeous on a decorative plate when served and you can eat them hot or cold. I had them for lunch with white rice as I'm on my way out the door now. I have some Korean kale to try by the weekend. Looks completely different from our American kale.
