This sounds great, I have all these ingredients too. I love vegenaise. Better

POTATO BOATS

 

 

10 sm white or red new potatoes

1 box Fantastic Foods Onion Soup and Dip Mix

(Fantastic Foods brand is found in the organic section

of your favorite store, I'm sure you could substitute)

1 1/2 cups fat free sour cream

1/2 cup Vegenaise

Fresh parsley

 

Wash the potatoes and place in boiling water, cook until just tender (do not

overcook). Drain and cool. To stabilize the potatoes, trim each end slightly.

Cut the potatoes in half. Using the small end of a melon-baller, scoop out a

few small portions to create a small opening in the potato.

 

Combine the soup mix witht he sour cram and vegenaise. Chill. Place mixture in

a pastry bag and pipe into potato halves. (I just plop it in!) Garnish with

fresh parsley.
