(:-O They are wonderful, heated up well in the microwave and very attractive in a casserole dish. " Mexicali Potatoes " 4 med. large baking potatoes 2 med. tomatoes chopped to make popping over one cup amount 4 oz. can of green Ortega mild chiles chopped and drained 1 tsp. chili powder 1 jalapeno minced (optional) 1/8 tsp. salt 1/2 cup shredded cheddar or jack cheese (vegan if you wish) Preheat over to 400 degrees. Oil the potatoes and wrap in foil and poke a few holes in them. Bake until tender about 50 minutes. In a bowl mix tomatoes, chili powder, chilis, salt and cheese. When potatoes are done chop them in chunks and place in an oiled glass baking dish. Cover with mixture. Sprinkle a lillte extra cheese over the top if you like.
