Guest guest Posted September 5, 2005 Report Share Posted September 5, 2005 I make my vegetable broth in the crockpot and freeze it in zip-loc freezer bags so I always have some on hand. I'd rather use my own than the canned type or add salty cubes. This is really easy to make and you can just let it simmer in the crockpot as you run your weekend errands. " Vegetable Stock " 2 tomatoes, chopped 2 medium or small onions chopped 2 stalks of celery chopped 4 med carrots chopped 1 turnip chopped 1 med. potatoe peeled and diced 2 garlic cloves chopped 8 cilantro or parsley sprigs 3/4 tsp. salt 1/2 tsp.dried thyme crushed or rosemary crushed (I like rosemary the best) 1/4 tsp. black pepper 1 whole bay leaf 6-8 cuts of water In crockpot combine all ingredients. Cover and cook on low heat setting for 8 hrs or on high setting for 4-5 hrs. Strain stock though a mesh strainer or through cheesecloth and discard solids. Makes 6-8 cups of veggie stock.
