This is a good old hearty sloppy joe crockpot recipe. " Sloppy Vegetable Sandwiches " 1 cup chopped carrots 1 cup chopped celery 3/4 cup dry lentils, rinsed 2/3 cup regular uncooked brown rice 1/2 cup chopped onion 1 clove garlic, minced 2 Tblspns. brown sugar 2 Tblspns. prepared mustard 3 1/2 cups vegetable broth 1 8 ounce can tomato sauce 2 Tblspns. vinegar season to taste with salt, pepper, red pepper flakes. Use whole wheat buns or French rolls with the filling. In 4 quart crockpot combine carrot, celery, lentils, uncooked brown rice, onion, garlic, brown sugar and mustard. Stri in vegetable broth. Cover and cook on low setting for 8 hrs. or on high setting for 5 hrs. Stir in tomato sauce, vinegar, salt, pepper and red pepper flakes; cover and cook an additional 30 mins. To serve, spoon mixture onto toasted buns or rolls. Makes 8 servings and it's better the next day! We just got back from the beach this past weekend, a last stab at summer, and I'm ready to try new recipes again. Last night I made your Green Meadows Six week Bran Muffins and we have already eaten so many! I added dried cherries, Yummy. I also made your crockpot Garden Fresh Tomato Sauce today, people just bring me bags of tomatoes!! Yummy....and I have it in containers in the freezer ready for a quick meal.
