Gazpacho

INGREDIENTS:

* 1 medium onion, finely diced

* 2 medium cucumbers, peeled, seeded and chopped

* 1-2 stalks celery, diced

* 2 medium bell peppers, diced

* 5 large tomatoes, diced

* 2 medium cloves garlic, minced

* 2 teaspoons salt

* 1 teaspoon oregano

* 1 teaspoon cumin

* 1/4 teaspoon pepper

* 2 cups tomato juice, plus more as needed

* 1 cup water

* 2 tablespoons olive oil

* 2 tablespoons lemon juice

* 1/4 cup red wine vinegar

 

 

DIRECTIONS:

In a large bowl, combine all of the ingredients. Adjust the flavors to

taste. If the soup is too thick, add more tomato juice. Cover and chill at

least 1

hour before serving.
