Guest guest Posted September 4, 2005 Report Share Posted September 4, 2005 Carrot in Orange Salad 1 lb carrots 3 oranges sprinkle of salt sprinkle of sugar 3 Tbsp grated fresh ginger 2 Tbsp lemon juice Cut the oranges in half. Remove six whole orange sections before Juicing the rest, leaving orange-peal bowls intact. Shred carrots. Put into mixing bowl. Season carrots with salt and sugar. Sprinkle in grated ginger and lemon juice. Pour on the orange juice. Stir and chill for several hours. Drain. Spoon salad into orange-shell bowls. Top with an orange segment.
