Friendly Sharing... Vegetarian Potato Puff

I joined this group because I read the group description, and I am a friendly

vegetarian with recipes to share. Here is my first:

 

 

 

Vegetarian Potato Puffs

 

3 med. Idaho potatoes

1 tsp. salt

¼ cup butter

½ cup sliced scallions

½ cup vegetarian soup broth

3 eggs, well beaten

3 Tbsp chopped parsley

A few shakes of salt

A few shakes of pepper

 

 

 

Wash potatoes. Section into quarters. Put into sauce pan with about an inch of

water. Add salt. Let water boil. When boiling, cover, reducing heat. Simmer

for about 20 or 25 minutes (until tender). Drain. Peal the potatoes.

 

While simmering...

Saute the scallions in the butter.

 

After pealed, mash the potatoes until they are free of lumps. Add the soup

broth, eggs, scallions, and parsley. Sprinkle with salt and pepper. Mix well.

 

Grease a 1½ quart cassarole dish. Pour in the potato mixture.

 

Bake at 350° for 35 to 40 minutes, until lightly browned and puffed.
