Evelyn's Scottish Scones recipe post-ovo lacto can be vegan also

My friend Eevlyn from Scotland finally shared her recipe with me, only after I

dog sat one weekend.LOL . I absolutely love scones, they are quick to make. I

also have a whole grain version around here somewhere.

 

" Evelyn's Scottish Scones "

 

11/2 cups all purpose flour

3/4 cup rolled oats

1/4 cup packed light brown sugar

2 tsps. baking powder

1/2 tsp. salt

1/2 tsp. cinnamon (I always use a pinch of cardamom but that's your

choice, I just love cardamom)

1/2 cup butter or margarine (I use butter)

1/2 cup milk (my soy works fine)

 

Heat oven to 375 degrees and lightly grease a cookie sheet or pizza pan.

Combine flour, oats, brown sugar, baking powder, salt and cinnamon in medium

bowl and mix well..

With a pastry blender or fork cut (not stir), in the 1/2 cup of butter or

margarine until mixture is crumbly. Add milk all at once and stir just until

dry ingredients are moistened. The key to making a fantastic scone is less

mixing. If you beat them like a cake mix then you get a tough scone.

On a very lightly floured surface, gently knead the dough 5 or 6 times (don't

smash it around and pound it like pizza dough now LOL ). Place dough on cookie

sheet, press into a 6 inch round about 1 inch thick.

For the tops: Brush the tops with a little bit of melted butter or margarine.

In a small bowl combine 1 Tblspn. sugar and about 1/4 tsp. cinnamon, mix and

sprinkle over tops. Cut circle into 8 wedges, just like you are cutting a pie

and separate them slightly.

Bake for 17-25 mins. until golden brown. Keep your eye on them towards the end.

 

Note: ( put the mix in an old salt or pepper shaker, it will be easier to

sprinkle over tops). I like to sprinkle sugar and pumpkin pie spice instead of

the cinnamon sometimes.
