" Hang -Yen -Bang " Chinese Almond Cookies 2 1/2 cups all purpose flour 3/4 cups granulated sugar 1/4 tsp. salt 1 tsp. baking powder 3/4 cup vegetable shortening 1 whole egg 2 Tblspns. water 1 tsp. almond extract 1/3 cup blanched almonds 1 egg yolk 1 Tblspn. water Stir together flour, sugar, salt and baking powder in medium bowl and set aside. Mix shortening and egg until creamy. Add 2 Tblspns. water and extract; mix. Gradually add flour mixture, stirring with a fork until the mixture draws away from the sides of bowl. Knead to blend, refrigerate. Heat oven to 350 degrees. Form dough into one inch balls;using palm of hand, flatten each ball to 1/4 inch thickness. Place on greased cookie sheet 1/2 inch apart. Press almond in each cookie, Brush each cookie with yolk beaten with tblspn. water. Bake 20-25 mins. or until golden. These keep well.
