I saw Sara Moulton make an upside down pineapple cake in her cast iron skillet the other day, but was also doing stuff with kids & missed her getting it out...this looked like a good one, too. Hadn't thought of baking in it. Made banana bread last night...made three little loaves instead of a big one, one has choc chips, one has blueberries, and one has strawberries...ah the freedom!! m Quote Link to comment Share on other sites More sharing options...

You will get more and more comfortable with your cast iron as you use it. It will be seasoned just right pretty soon. Just keep cooking in them. I love to bake in them also. The heat is very even, the bottom which is actually the top when you turn it over always has a nice crunch to it.
