I never really had a name for this dish, just kind of invented it. I know it's very good though. Perfect during the holiday season. Goes good with Thanksgiving leftovers. " Cast Iron Skillet Potatoes with Onions and Leeks " 4-5 large potatoes, peeled and cut in round slices. 1-2 onions cut in slices 2 leeks sliced salt, pepper, dash of red pepper flakes or seasoned non-salt to taste. Heat oven to between 425 - 450 degrees Saute onions and leeks in a tablespoon of olive oil until slightly tender. Pour 1-2 tablespoons of olive oil on bottom of skillet and rub up the side. Place a layer of potatoes salt & pepper to taste and place a layer of onions & leeks. Repeat with layer of potatoes and a layer of onions and leeks and some seasoning, ending with a layet of potatoes. Salt & pepper. Pour a little water or veggie broth over dish and a small drizzle of olive oil. Cover tightly with foil and bake on lower oven rack for 40 minutes or until potatoes are tender. Remove from oven and turn onto a plate to serve. The bottom will be crunchy good. Save this recipe for a cooler weather day this is a perfect dish for autumn or winter.
