My Gran's Cast Iron Skillet Pineapple Upside Cake recipe post ovo-lacto

I finally found one of my yummy cake recipes. It takes a seasoned cast iron

skillet. I use my 9 inch one. My Gran left me very few recipes and I cherish

this one. I gave thias recipe to a girlfriend and she made this same recipe

with a can of well drained peaches and said it was wonderful. I have yet to try

it. That's on my list of things to bake though.

 

" Cast Iron Skillet Pineapple Upside Down Cake "

 

1/4 cup butter (real butter really makes the flavor of the topping)

2/3 cup packed brown sugar

1 15 ounce can sliced pineapple, well drained

1 1/3 cups flour

1 cup sugar

1/3 cup vegetable shortening

1 tsp. vanilla

3/4 cup milk

1 1/2 tsp. baking powder

1/2 tsp. salt

1 large egg, slightly beaten

maraschino cherries

 

Heat oven to 350 degrees

Melt butter in iron skillet (I put in oven for a few minutes).

Sprinkle brown sugar over the butter and arrange a single layer of pineapple

over the brown sugar.

Place a cherry in center of pineapple slices.

In medium bowl beat the remaining ingredients together until well blended.

Pour over pineapple in iron skillet and bake for 35-40 minutes or until

toothpick inserted in center comes out clean.

Take out of oven and turn onto a heat proof plate. Cool on wire rack.
