The was in a magazine. The woman posted it as her favorite and the editor said

it was tested and they agree. I didn't make these but I know you wanted a

recipe. You can probably tell by the ingredients if you would care to try it.

They sure look delish in the picture.

 

" Vegan Lemon Bars "

 

Crust

~~~~~~

1 cup unbleached white flour

1/2 cup vegan margarine or extra virgin coconut oil

1/4 cup sugar

 

 

Topping

~~~~~

1 cup granulated sugar

Grated zest of one lemon

3 Tblspns. fresh lemon juice

1/4 tsp. salt

1/2 cup unsweetened applesauce

1 1/2 tsps. baking powder

1 Tblspn. powdered sugar( for the top)

 

 

Preheat oven to 350 degrees

In a medium bowl combine crust ingredients and mix to a coarse, mealy texture.

Press mixture into a 9 X 9 inch square baking pan, making a raised 1/2 inch rim

around the sides. Bake for 20 mins. until set, but not brown.

While crust is baking, make topping; In same mixing bowl, stir together the

granulated sugar, lemon zest, juice and salt.

In a small bowl, combine applesauce and baking powder, whisking until well

blended.

When crust is done, stir applesauce mixture into sugar mixture. Pour topping

over hot crust and bake for 50 mins. or until center is slightly firm to the

touch. Cool completely and sprinkle with powdered sugar before cutting into

bars.
