Guest guest Posted August 29, 2005 Report Share Posted August 29, 2005 FRUIT KABOBS Ingredients: Kabobs: juice-packed canned pineapple chunks (don't discard juice) 1 kiwifruit 1 cantaloupe, balled 8 small strawberries Sauce: ½ cup fat-free plain yogurt 1 tablespoon honey 1 tablespoon pineapple juice (from pineapple) 1 ½ teaspoons fresh mint leaves, chopped Pinch of ground cinnamon Directions: To make skewers: Seperate pineapple chunks from juice Peel the kiwi, cut into 4 wedges, and halve each wedge crosswise. Thread the fruit onto four 10-inch to 12-inch wooden skewers, sequencing 3 cantaloupe chunks, 3 pineapple pieces, 2 kiwi pieces, then 2 whole strawberries per skewer. To make the sauce: In a small bowl, mix the yogurt, honey, pineapple juice, mint, and cinnamon. Sauce can be a dipping sauce, or trickeled over the kabobs.
