I warm a little oil in the sauce pan and toss leftover veggies in the sauce pan and add my cooked pasta. I use any size and shape or just spaghetti. I don't know if you use onions and garlic but they add such good flavor. I always have a few bags of frozen veggies on hand and those work well also. Adding different herbs always makes it taste like a new dish. Any bean patty is very inexpensive and I do the same thing Mel Hopp does. I eat one for dinner, take one for lunch and usually freeze the other two and label them for a quick meal. You can get 4 small patties or 3 medium out of a can of beans. I don't know if you have a 99Cent store there or a discount store like it. They have beans on sale for 2 or 3 cans for a dollar. I find a lot of good deals by checking the market adds too. Whatever veggie is on sale I'm sure to go thru my recipes and make a few dishes that contain the deal of the week veggie. Grilling a large slice of bread in the skillet and topping with sauteed veggies and some vegan mayo and mustard makes a nice light meal and you don't have to heat up the house and it's fast.
