Mel ideas for meals

I know you're tired of pasta but if you try different ideas it might help. I

warm a little oil in the sauce pan and toss leftover veggies in the sauce pan

and add my cooked pasta. I use any size and shape or just spaghetti. I don't

know if you use onions and garlic but they add such good flavor. I always have

a few bags of frozen veggies on hand and those work well also. Adding different

herbs always makes it taste like a new dish.

Any bean patty is very inexpensive and I do the same thing Mel Hopp does. I eat

one for dinner, take one for lunch and usually freeze the other two and label

them for a quick meal. You can get 4 small patties or 3 medium out of a can of

beans. I don't know if you have a 99Cent store there or a discount store like

it. They have beans on sale for 2 or 3 cans for a dollar. I find a lot of good

deals by checking the market adds too. Whatever veggie is on sale I'm sure to

go thru my recipes and make a few dishes that contain the deal of the week

veggie.

Grilling a large slice of bread in the skillet and topping with sauteed veggies

and some vegan mayo and mustard makes a nice light meal and you don't have to

heat up the house and it's fast. Hope this helps you, Donna

I am in Texas...and it's super hot until about mid -

sept. and early october then it's into the upper 70s

til Dec-Jan for a mild and short winter. I also live

in a TINY apartment that gets little to no light. I

have two plants on my dresser in my bedroom that wilt

or grow mold because of the sparse or super strong

sun. It's very strange.

I am from Kansas. Produce is so cheap and we have

farmers markets. I have to drive down south to Austin

for cheaper produce and a farmers market. I live in

the sucky Killeen/Ft. Hood area where people only eat

meat, dairy and potatos. And those are even frozen.

You should see the frozen food sections here! Never in

my life! Fast food chicken is also king here.
