Hi Donna:

 

Yes this is great cookbook.. Even my non-vegetarian husband always liked

anything I made form this book. I used to have a large collection of

cookbooks,

I love to buy them I always have. However I had a lot of them boxed up in

the basement after we moved 3 years ago and the basement is very, very damp

and I think it may have flooded once, anyway a lot of them were ruined.

One thing I used to love to do when I was a stay at home mom was go to the

library and check out Vegetarian cookbooks and read them from cover to cover

and try recipes from them. If I like the recipes I would sometimes buy the

book.

I too used to read them at night when I couldn't sleep, or sit outside and

read them when the kids would play outside.

I posted some recipes from this book yesterday. I agree, I have never had a bad

dish from it yet. Donna

CREAMY CORN AND SPINACH

 

2 tsp vegetable oil

1 cup chopped onions

1 1-pound cram-style corn

1 10 oz, package frozen chopped spinach thawed and drained well.

1/4 tsp pepper

salt to taste

 

TOPPING

 

2 TBS wheat germ

2 TBS grated parmesan cheese

2 tsp butter

 

Preheat oven to 375 degree's

Lightly oil a 1-quart baking dish and spray with a nonstick cooking spray.

Heat oil in a medium skillet over medium heat. Add onions and cook,

stirring frequently, until onions are lightly browned and edges begin to crisp,

about 10 minutes. Add small amounts of water if necessary to prevent sticking.

 

Place browned onions in a large bowl. Add corn, spinach, slat and pepper.

Mix well. spoon into prepared baking dish.

 

Combine wheat germ and parmesan cheese and sprinkle evenly over casserole.

Dot with butter

 

Bake uncovered 30 minutes.
