Probably could have called it Casablanca Couscous also........LOL " Marrakesh Express Couscous " 2 tblspns. olive oil (one for the saute and one for the finish) 3 shallots finely chopped 1 cup of diced eggplant or zucchini (both work well) 1 or 2 cloves of garlic minced 1/4 tsp. turmeric 1/4 tsp. gr. coriander or cumin (use which you prefer) salt & pepper to taste 1 cup couscous (scant cup) 1 cup water or veggie broth (full cup) 1 tblspn. lemon juice Heat one tblspn. olive oil in saucepan, add shallots, garlic, turmeric,coriander or cumin, eggplant or zucchini, and salt & pepper. Saute over med. heat, stirring until tender but slightly firm and not wilted and brown. Add the water and bring to a boil, stir in the couscousand stir until blended. Cover tightly, remove from the heat and let stand for 5 mins. Add the other tblspn. olive oil and lemon juice, stir to blend gently as you fluff with a fork. Keep warm and it's ready to serve. Note: I sometimes add nuts to the top before I serve. Make sure you sit on huge velvet pillows to enjoy this with your legs crossed in a room with the huge brass hookah in the corner and the beads hanging in the doorway, don't forget the imcense.
