RECIPE Jenni's vegan cornbread! (finally!) Thank you!

Thank you so much. I will print for myself and I can't wait to share this with

my vegan girlfriend. She gave up on cornbread since they always contain eggs in

the recipes. Donna

This is a family favorite. In my house, any meal is made all the

better by adding cornbread. =)

I've also made it countless times to bring to potlucks and such, people

are always happy with it.... I hope you all enjoy it as well.

 

When I make a batch, I usually make and extra 'mix' of just the dry

ingredients which I keep it in the cupboard in an old peanut butter

jar. The jar has a yellow lid, so I layer the ingredients and I like

how it looks... (see photos)

 

preheat oven to 400 degrees Fahrenheit. grease whatever pan you will

be using. I use an eight or nine inch square, usually... or I'll make

muffins.... I bet this would be great in Donna's muffin top pans!

 

1 1/4 cup wheat flour (you can use white if you want.. then you get a

sunnier yellow muffin. I like the wheat best)

1 1/4 cup yellow cornmeal (you can use a mixture of yellow and blue to

get different texture and color.. or white corn meal taste good too)

1/4 c sugar... ( or 2 to 4 tbsp maple syrup, or other sweetener of

choice)

1/2 tsp salt

 

mix the above then add the wet ingredients...

 

1 1/2 cup soymillk... (actually that was my original recipe.. I've

altered it now originally out of frugalness, but now I always make it

with a mixture of 1/2 water and soymilk... 3/4 cups of each)

and 2 tbsp of oil.. I use canola.

 

mix until wet, poor into pan, and bake..

 

 

lately we've discovered that if there is bread the next day, it is

really good sliced and grilled on the little foreman grill... (we make

toast that way, since we don't have a toaster...)

 

okay.. that's all.. let me know what you guys think!

 

oh.. also.. I added about a cup of blueberries to this recipe and they

were AWESOME!

vegans are always appreciative of this particular recipe... I've found

that most baked goods are easily adaptable.. if the recipe contains one

egg, it can often be omitted... or I use the flax egg replacement...

 

I hope she likes them!!! =)

I " m sorry it took me so long. my internet connection has been on the

fritz.. never know when I can catch a signal (gotta love wireless...

cuz otherwise I'd be completely w/o signal ! UGH!!)

 

anyway, I hope she likes it! it is so easy!
