I usually take the oilve oil and place in the dry couscous brefore I cook it, I rub it through with my fingers and this will prevent it from being dry. For this recipe omit olive oilve when cooking because it will be part of the salad dressing. This is a versatile salad, you can use whatever veggies you have just steam some up. " Vegetable Couscous Salad " 1 cup water (full cup) 1 cup dry couscous (scant cup) 4 green onions. chopped 2 med. cucumbers, diced 2 med. green, red or orange bell pepper, chopped 1 16 to 19 oz. can of beans, drained (use your favorite black, garbanzo, kidney, pinto, etc.) 1/2 cup chopped cilantro or parsley 2 Tblspns. lemon juice 1/4 cup olive oil 1/2 tsp. ground cumin 1 garlic clove minced salt & pepper to taste add a cup or more of your favorite steamed veggies, broccoli, cauliflower, fresh corn, peas, diced sun dried tomatoes, minced jalapeno, canned baby corn, chopped jar artichokes, dried cranberries are good in this but you need to soak them in a tiny bit of hot water for a few minutes first, nuts are good in this also and of course olives. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~\ ~~~~ In a medium saucepan bring water to a boil and stir in the couscous, then immediately remove from heat, cover the pot. Let the couscous stand for 5-10 mins. while you prepare the other ingredients. Fluff gently with a fork to loosen. In a large bowl combine all the cooked vegetable ingredients and the cilantro or parsley and the cooked couscous. Mix gently with a fork making sure you don't mash up the ingredients. In an empty jar, combine the lemon juice, olive oil, garlic and cumin. Screw on the lid and shake to mix. Pour dressing over the couscous mixture and toss, adding salt & pepper to taste, if you need a little more dressing add a bit more lemon juice and olive oil. Chill until ready to serve.
