See you already find humor the very next day in your tofu error but you also learned something from it. When I marinate tofu I leave it in a good size cube or thick slice. I never mince it up. The silken tofu is more for smoothies, dips, baked or refrigerator pies, that type item. That spinach recipe is good and so is the vegan version and I hope your son will try it. Now like Amy said, don't use the silken tofu for baking. It's better to get the extra form in the tub with water. You cut it in half flat lengthwise and lay on paper towels and press the water out. I don't know what recipe you were trying but this works well for breading and frying, grilling, baking, stir frying, etc. Tell me a little bit more of what you were trying to do with it, what's the name of the recipe?
