Ok PT and Chanda the real stuff with butter in honor of my nephew Tony, his favorite Creamed Spinach recipe post

Now my older nephew will only eat his creamed spinach with buddah too. I make

his this way, all the rest of us use the Savory Sauce. Here you go, it's really

very easy. This is from my old relic

" Redbook Cookbook " dated 1960 and it is a huge book I found for $2.00 at

Goodwill years ago. Some of the best dishes are in this book.

 

" Creamed Spinach "

 

2 10 oz packages of frozen chopped spinach

3 Tblspns. butter

2 Tblspns. finely chopped onions

2 Tblspns. flour

1 cup milk or light cream

1/2 tsp. salt

pinch of nutmeg (optional)

 

Cook spinach accoring to package directions; drain thoroughly anf set aside.

Melt butter in saucepan over medium low heat. Add onion and cook until tender;

stirring occasionally. Remove from heat. Blend in flour and gradually add

milk. Cook over medium low heat, stirring constantly, until thickened. Stir in

salt and nutmeg, gently stir in spinach and heat. Serves 6

 

Note: I usually steam up a handful of pearl onions and toss in at the end of

either spinach recipe.
