Slow Cooking Grains recipe post-vegan another crockpot recipe

This is delish as a side dish, with tortillas, I put on top of pizza crust and

bake with parmesan and veggie pepperoni, etc. High energy and packed with

protein.

 

" Slow Cooking Grains "

 

1/4 cup barley

1/3 cup brown rice (I use short grain brown)

1/4 cup millet

1 onion chopped

1 red, green, yellow or orange bell pepper chopped

2 carrots finely diced

1 stallk celery chopped

1 15 1/2 oz can of kidney beans ( add at the start or after it's cooked 2hrs)

1 clove garlic minced

8 oz. tomato sauce

1 15 1/2 oz can of stewed tomatoes (I use the Italian flavored one)

1 1/2 cups fresh or frozen (thawed and drained) corn

2/12 to 3 cups water, broth or you can add one bouillon cube if using water

1 tsp. dried basil

salt & pepper to taste when done cooking.

 

Put everything together in the crockpot , cover and set to high just until it

gets really heated up and then set on low and let cook about 6 hrs. Check on it

as each crockpot cooks a little differently.
