Guest guest Posted August 23, 2005 Report Share Posted August 23, 2005 Have you ever tried a Red Gold? It's a red skinned potato with gold flesh instead of white. Almost like a mix between a Yukon and a Red. It has a wonderful texture and flavor. I think my favorite potatoes are fingerlings. They are so versatile and hold their shape very well, perfect for boiling. Also, not every potato is the best boiled, based on its starch content. Those that come out water logged would mean that they shouldn't be boiled. Try steaming/pressure cooking or baking them. It is amazing the variety of potatoes out there. Of course based on what most stores carry, people are only aware of reds, whites and russets and sometimes Yukon Golds. Try a farmers market for some delicious and unique varieties.
