Guest guest Posted August 23, 2005 Report Share Posted August 23, 2005 I make this often for my soup or bean dishes, etc. You don't even need to add salt. The kombu supplies the salty flavor. " Basic Sea Vegetable Broth " 5 cups of water 4-5 inch piece of kombu 1/3 cup dried shitake or other mushrooms 1 tsp. minced fresh ginger 1 Tblsp. miso 3 green onions chopped Bring water to a boil in 2 qt. saucepan. Add kombu and dried mushrooms, let simmer for 1 hr. Remove kombu and dice and return it to the pot and add ginger and green onions simmer another 15 mins. Stir in miso and use as your broth for cooking or enjoy as a bowl of soup. Works wonders if you feel a cold coming on. If you want a light soup them toss the green onions uncooked at the end.
