I have so much of it to use up. You're welcome for the recipe. I have been digging crockpot recipes out for Jane since she is dusting off her crockpot and I remembered my beloved ratatouille. It's so versatile. Enjoy! I think I will make a batch within the next week myself. I'll post a great tomato sauce crockpot recipe if you are interested.
