(Recipe Review) Black Bean Burgers by Donna

These are very good. I took one burger, sliced it in half and placed each

half on a tortilla along with some fresh jalp slices and a dollop of sour

cream on each. Good stuff.

 

I used 2 of the bigger cans of black beans because that's what I had on hand

(20oz??). I'll use the bigger cans next time too. I'll increase the veggies

and seasonings (which I had already but will increase further next time) to

make up for the increase in beans and may even decrease (just a touch) the

breadcrumbs. Since there were more beans the burgers were pretty big which

is great. You can either do what I do and split a burger for two tortillas

or have a traditional style monster (bean) burger.

Black Bean Burgers

 

2 (15 oz) cans of black beans, rinsed and drained

1 small onion finely chopped

2/3 cup breadcrumbs

1 clove garlic minced

1 tbslp fresh cilantro or basil (your choice) finely chopped

1 tsp. ground cumin

2 eggs (I use 2 egg whites) beaten

1 sm. jalapeno pepper minced (optional)

salt and pepper

 

 

Place beans in bowl and mash with a fork. Add remaining ingredients

and mix well.

Shape into 6 patties and fry in a little oil on medium heat a few

minutes on each side.
