This recipe is from my antique Betty Crocker cookbook from 1963 I believe the date is. I have a few more from this book. I'll post later. " Lemon Squares " crust ~~~~~ 1 cup all purpose flour 1/2 cup margarine or butter (room temp.) 1/4 cup powdered sugar Top ~~~~~ 2 eggs 1 cup granulated sugar 1/2 tsp. baking powder 1/4 tsp. salt 2 Tbls. lemon juice (sometimes I make them with lime juice instead) Preheat oven to 350 degrees. Blend flour, butter and powdered sugar together and press evenly in the bottom of a 8X8X2 pan. Bake 20 mins. Beat the rest of the ingredients together and pour over the baked crust, and bake 20 mins. Do not over bake!!!! The filling will puff during baking but faltten down as it cools down. Cut into 16 squares and serve. Note#1: The nice thing about this recipe is it's not only tasty but you more than likely have all these ingredients on hand, kids love them too. Great rainy day treat to whip up really fast. Enjoy!!!!!!! Note #2: I spray the pan lightly with a non-stick spray. I love the spray from Trader Joe's for those of you that have this store. They have a canola or olive oil spray and it's 1/2 the price for the ones from the market and who knows what's in those. " There's a place a Gemini dream.
