Guest guest Posted August 17, 2005 Report Share Posted August 17, 2005 These are a wonderful appetizer, the filling is so good you can use in a sandwich wrap or a lasagna filler. I also like it in the center of my baked potato or filling the crater in my mashed potatoes. Oh wait, I forgot........it's so good on top of steamed rice. " Popeye's Stuffed Mushrooms " 20-24 med.large mushrooms, (remove stems, chop and save) 1 cup onions, finely chopped 1 garlic clove, minced 1/4 scant tsp. died oregano 2 cups fresh spinach, finely chopped 2 Tbsps olive oil or butter 3 Tbsps breadcrumbs 1/2 cup Parmesan cheese or a vegan parmesan salt & pepper to taste Preheat over to 375 degrees and oil a cookie sheet or pizza pan. Place mushroom caps face up on sheet. In a large skillet heat oil. Add onions and oregano and saute. When onions begin to brown add chopped mushroom stems, spinach and breadcrumbs. Continue to cook on medium heat untill any moisture had evaporated. Remove from heat and add Parmesan, salt & pepper and stir until well blended. Stuff mushrooms with filling and gently drizzle any remaining oil or butter over tops. Bake for about 15 mins. and serve. " There's a place a Gemini dream.
