Guest guest
Here we go. I'll try this again. I've eaten this type salad before but never had a rcipe for it. Now I found one and it's almost the exact dish. " Spicy Indonesian Coconut Salad " 1/2 lb. bean sporuts, rinse, clean and remove seed casing 1 cup green beans cut into 2 inch lengths 1 cup cabbage, thinly sliced 2 cups bok choy, chopped 2 cups greens such as spinach, kale, chard, etc. Coconut Dressing ~~~~~~~~~~~~~ 2 red chilies, seeds removed 3 cloves garlic 2 tsp. fresh grated ginger 1/2 tsp. ground coriander (I toss in alittle fresh cilantro instead) 3 kaffir lime leaves sliced (lemongrass works) 1 scant Tblspn. brown sugar 1 tsp. salt 2 cups grated fresh coconut Place all dressing ingredients except the coconut in a food processor or blender and process. Transfer to a heat proof bowl and stir in the coconut. Put bowl in a steamer, cover and steam over boiling water for 30 mins. Transfer to a wide container and stir and set aside to cool. Blanch the vegetables separately. Drain all the vegetables and place in large bowl. Add the coconut dressing and toss. Serve at room temp. Note* I love crunchy noodles sprinkled over the top. I even braise firm tofu in a little touch of teriyaki and dice for the top. " There's a place a Gemini dream. There's no escape from the love we have seen. So come with me, turn night to day.
