A friend who does food demos at the co-op here pointed out to me a new product on their shelves: A vegan marshmallow creme: Suzanne's Ricemellow Creme. (http://www.suzannes-specialties.com. Ingredients: brown rice syrup, soy protein, natural gums and flavors.) I tried simply putting some of that on graham crackers with melted organic dark chocolate, but it was missing that toasted flavor, so I went and got my little butane torch from my storage unit. After setting the chocolate to melting in a double boiler, I spread the marshmallow creme on the graham crackers, and then I lit the torch. With circular motions, I moved the flame over the creme, and first it bubbled, then turned a nice tannish brown. I found it was easy to control the brownness, and I left no bit unbrowned.
