It was inspired by some food I had at a restaurant called Tokyo, one of the oldest japanese restaurants in Las Vegas, and some recipes I've looked up online to get an idea of making a proper soba dipping sauce. ZARU SOBA 1 bunch soba noodles (yields about 2 cups cooked) 1/2 c. dashi (or vegetable broth) 2 tablespoons shoyu (soy) sauce 1 Tablespoon mirin (sweet japanese cooking wine) (optional) 1-2 teaspoons saki (japanese drinking wine) Cook noodles according to package directions. Immerse in ice-water & stick in the refrigerator to chill the noodles while the rest of the meal is prepared. Mix together dashi, shoyu, mirin ( & saki if desired). Set aside in small sauce/dipping/serving bowl while preparing the spinach salad. JAPANESE SPINACH SALAD 1 10-oz pkg fresh baby spinach 2-3 tablespoons rice vinegar 2-3 tablespoons soy sauce 2-3 tablespoons water (optional, to thin out the dressing if it's too salty or vinegary) Steam spinach until just wilted. Put in salad bowl, mix together vinegar, soy sauce & water (optional) and pour over the spinach. To prepare the rest of the meal, drain the soba noodles & put on dinner plate. Eat soba noodles by dipping them in the soba noodle sauce or pouring the sauce over the noodles.
