It's too hard to prepare so I buy is usually in a jar at the Latin food isle of the market. Cactus tastes very similar to green beans. Don't pass it up if you've never tried it. This is a good easy dish to prepare. " Cactus Salad " 3 cups diced nopll cactus 1/2 cup diced radishes 1 tomato chopped 1/4 cup chopped cilantro leaves 1/2 cup green onions chopped 1-2 serrano chiles, seeded and chopped 3 Tblspns. olive oil 2 Tblspns. fresh lime juice 1/4 tsp. dried oregano salt & pepper to taste (Optional silces olives) Rinse cactus and drain, place in salad bowl with tomato, onions, radishes, chiles and cilantro. Whisk together the olive oil, lime juice, oregano, salt & pepper. Pour over cactus salad and toss. Note: Cactus is delicious sauted with onions and tomatoes and served over rice or you can saute cactus with onions and scarmbled eggs and make a burrito.
