Guest guest Posted August 14, 2005 Report Share Posted August 14, 2005 Ok, found my recipes for mass feedings of pancakes: Pancakes for 40 people About 60 pancakes 24 cups of flour 2 batches of batter, 12 cups flour each WHOLE GRAIN VEGAN PANCAKES WITH WHEAT AND BUCKWHEAT 4 cups hard ww flour 2 cups soft ww flour 4 cups buckwheat flour 2 cups corn flour 12 t baking soda 3 cups soy milk powder 12 t vin oil water WHOLE GRAIN VEGAN WHEAT-FREE PANCAKES WITH BUCKWHEAT 4 cups brown rice flour 2 cups oat flour 4 cups buckwheat flour 2 cups corn flour 12 t baking soda 3 cups soy milk powder 12 t vin oil water Both recipes require enough water and oil to make the liquid ingredients equal the volume of the dry ingredients, but then some adjustment needs to be made to get the right consistancy, and this will vary because flour, though appearing to be dry, always has some moisture in it, and how much it has will effect how much more water you will need. Bananas or berries are always good in these pancakes. Berries have enough moisture that will require using less water, so you will have to make some judgement about how much moisture the berries will add and reduce the water by that much. Smooshed bananas have just the right consistancy to add to the batter without having to adjust anything else. The bananas can be fresh or thawed from frozen. In fact, the recipes above assume the addition of bananas, which provide some natural sugar which will allow the pancakes to brown nicely as well as provide enough sweetness to compliment the grains.
