Too hot to cook...want something cold! Here's my latest " creation " :

2 cups dry multi-colored rotini pasta, cooked and cooled

two green onions, sliced thinly

handful cherry tomatoes, cut into halves or quarters as needed

1/4 cup diced zucchini

1/4 cup leftover baby corn, sliced

1/4 cup leftover straw mushrooms

1/4 cup sliced black olives (slice whole olives with an egg slicer)

1/2 jar marinated artichoke hearts, cut into small pieces

1 stalk celery, diced

ranch dressing

lemon pepper

garlic salt

Vegit...all seasonings to taste.

Toss together until well blended. Chill.

This didn't all fit into the lidded dish I had for it, so I ate the

remainder...delicious...can't wait to see how it tastes after chilled

and flavors blend. Enjoy!

yum.

I don't have all the ingredients, but it gives me ideas. I am gonna throw stuff

together too with the rotini. I have green squash, did you cook the zucchini

first? I don't have scallions but I do have some Vidalia and I love ranch.

thanks!
