Guest guest Posted August 11, 2005 Report Share Posted August 11, 2005 I make this often since I almost always have these veggies on hand and it's not only delicious but works as a side dish, tossed on top of rice or stuffed in a pita, etc. Enjoy! " Fresh Red and Green Side Dish " 2 Tblspns. oilve oil 2 medium zuchini cut in half lengthwise and then in half moon slices 2 garlic cloves crushed 3/4 cup cherry tomatoes cut in half 2 tblspns. fresh chopped cilantro or basil 1/2 tsp. salt pepper to taste Heat 10 inch skillet, add olive oil to coat pan. Add zucchini and cook stirring often until slightly browned, about 2 mins. Add garlic, cook stirring until just fragrant, about 30 seconds. Add tomatoes, stir until softened, about one minute.
