I have cow's milk allergy, not lactose intolerance so I make this. I love cheese but can only get away with small amounts of aged hard cheeses or I'll need a Depend.........hahahahahaha " Rich Tofu Creme Cheese " 1/2 cup raw cashew pieces 3 Tblsp. water 2 Tblsp. fresh lemon juice 1 Tblsp. rice syrup or 2 tsp. pure maple syrup ( I use the maple syrup) 1 cup firm tofu, patted dry and crumbled 3/4 tsp. salt scant pinch of garlic granules Place the cashew pieces, water, lemon juice and syrup in a blender and process several minutes into a thick, smooth cream. Add the salt, crumbled tofu and garlic granules, and process until very smooth. It is essential to blend this mixture for several minutes in order to pulverize the tofu and achieve a velvety smooth consistency. Chill thoroughly before serving.
