Add 1-2 tbsp olive oil to a saute pan. Add chopped onion and garlic and saute until the onion is transluscent. Add sliced zucchini or yellow summer squash and cook until the squash is soft. Then open your favorite jar of pasta sauce and pour right on top. Stir to incorporate and let simmer. (you can also add " grounds " if you'd like) Meanwhile, bring a pot of water to a full boil and then add your favorite pasta (spaghetti, rigatoni, egg noodles). Each pasta takes it's own time to cook so after a couple of minutes (5-8), taste one for the right texture. When cooked, drain, put some pasta in a bowl and top with your veggie sauce. Then smother in parmesan cheese. This recipe will probably take about 20 minutes total. For more protein, you can add a cut up veggie burger or do you buy those " grounds " ?
