One of my favorite ways to change up mashed potatoes is 1) leave the

skins on and 2) add celery root.

 

Without peeling the potatoes cut into quarters. The celery root will

need its outer layer cut off. Cut up a quarter to a half of that into

pieces and boil with the potaotes until soft. Potatoes and celery root

can be cooked in veggie broth, too.

 

Drain and mash with butter, salt and pepper.

 

Leek & Potato Soup (can be served, hot, cold or room temp)

leeks should be available now at farmers markets. try to get ones with

as much white as possible.

 

4-6 leeks (depending on size and how much white)

5 tbsp butter

6 cups veggie broth

3-4 potatoes, peeled and diced.

half & half

fresh ground pepper

 

1. Cut leeks in half lengthwise and wash thoroughly. The cut into thin

slices getting all of the white and some of the light green (don't go

too far up as the leaves are tough).

 

2. Saute the leeks, on medium heat, in the butter until softened.

 

3. Gradually add the veggie broth and the potatoes. Cook until the

potatoes are tender.

 

4. Remove from heat and begin adding the soup to a food processor or

blender. At this point you can put the blended soup into a different

container or I just put it back into the pot and add more to the

blender (some of it blended, some of it not).

 

5. Once it is all blended add some half & half (I usually skip this

step as it's rich enough). Eat and enjoy or refrigerate and enjoy as a

cold soup (which it's then known as Vischisyoise)sp?
